Homemade Black Kongguksu (Cold Soybean Noodle Soup) for a hot summer day

Nothing beats a bowl of ice-cold Kongguksu when the weather gets hot!

This one is extra special because it’s made with black soybeans (seoritae), which gives the broth that beautiful, rich grey color. It is incredibly nutty (gosoe-han), creamy, yet so clean and refreshing.

Topped with fresh cucumbers, a slice of tomato, and toasted sesame seeds for that perfect crunch.

Are you team salt or team sugar for your Kongguksu? (Personally, I’m team salt!)
