What am I doing wrong

Ive attempted making Korean food multiple times and failed every single time. I love Korean food and love eating it at restaurants, I’ve tried making teokbokki so many times and it just doesn’t taste right it’s always too thick or overcooked or not flavourful enough, I tried making kimchi fried rice today for the second time and I have to throw it out it looked great but for some reason tasted almost bitter… And it wasn’t as sweet as the restaurants. I love eating kimchi on it’s own or with ramen and love gochujang in soups or as a marinade but I can never make an actual recipee. I just want to know tips or maybe what I’m doing wrong I used a recipe by Christieathome today from tiktok😔
