I’m Korean and I’m curious how kongguksu comes across to people who didn’t grow up eating it. In Korea, it’s one of the foods people start craving when summer arrives. It’s a cold noodle dish served in a creamy broth made from finely ground soybeans, so it feels refreshing but still filling on hot and humid days. The flavor is usually quite simple and subtle, which I think can be either comforting or a little unfamiliar depending on what you grew up eating. If you’ve tried it, what was your first impression?
