good dishes to make that aren’t particularly processed?

hi, i’ve been looking to add more korean food to my menu, i’m pretty familiar with your basics (kimbap, bibimbap, jajangbap/myeon, japchae, mandu, lots of jigaes, pajeun, godeungeo-gui, tteokbokki, cold noodle soups etc) but i’d like to branch out… any recommendations for good cold weather food that isn’t made up of a lot of processed stuff? i really have no interest in the rosé this cheese that funky corndog influencer conbini food. i’m going to try oxbone soup soon and would like ideas in that vein!
