Culinary Class Wars - translation/explaination

I’ve just watch Culinary Class Wars on Netflix and I was wondering if anyone can translate/explain this ingredient list from the contestant “Culinary Monster” Asparagus Lemon Nuruk Purée dish.
From what I’ve read Nuruk is a fermentation starter, but is he actually using the starter or was it used to as a starter in something else and then used in the dish, and does anyone have an alternative to Nuruk since it seems hard to find?

As someone who has no knowledge about the Korean language I can’t translate it myself, and seemingly neither can the AI slob like GPT, Gemini, etc.
