Mak-bulgogi & Kkeopjilkong maneul bokkeum

Hello,

Made these the other day, I opted to have these by themselves as I am T2D so limit my carbs considerably.

Bulgogi

I followed the recipe from https://www.maangchi.com/recipe/easy-bulgogi

And it was super easy!

Recipe is below, but you’ll need to visit the site for the method. This is a simplified version of the traditional Korean bulgogi but is still very delicious!

Ingredients

Serves 2 to 4

  • 1 pound beef tenderloin, top sirloin, or skirt steak), slice into ⅛-inch-thick slices
  • 4 garlic cloves, minced
  • 2 green onion, chopped
  • 2 tablespoons soy sauce
  • 2 tablespoons sugar
  • 3 tablespoons water
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon toasted sesame seeds, coarsely ground
  • ½ teaspoon ground black pepper

That’s it!

I will be making this again – super easy, and so tasty.

The second thing I made were these Garlic Green Beans.

These were from the same site – https://www.maangchi.com/recipe/kkeopjilkong-maneul-bokkeum

In making these, I had no white/yellow onions. Only a half of a red onion, so that’s what I used.

  • 1 pound of trimmed green beans, washed, drained, and halved crosswise
  • 1 teaspoon kosher salt
  • 8 to 12 garlic cloves, sliced thinly
  • 1 small onion (½ cup), sliced
  • 1 tablespoon vegetable oil
  • 3 tablespoons soy sauce
  • 1 tablespoon toasted sesame oil

I added some bean sprouts to this, as I had some left over from something else that I made. I really like some of these recipes because you can add other vegetable to it and for the most part it retains the flavor profile.

You could skip the salt to lower the amount of sodium in the recipe.

You can probably have these with rice, or noodles – however I had them by themselves, so no rice or noodles as I need to keep the carbs as low as I can.
