Real kimchi takes days. This one doesn’t. Baechu-geotjeori is the fresh, unfermented version — crunchy, dressed like a salad, eaten the same day.

It tastes like kimchi, but brighter and crunchier. The cabbage is still fresh, not sour from fermenting. You get chili heat, garlic, a little sweetness, and salty fish sauce, with the leaves still snapping when you bite them. It’s the “tonight” version, not the weeks-old jar.

Baechu-geotjeori (Fresh Kimchi Salad) — about 45 min, 6 side servings

900 g napa cabbage, 3 tbsp coarse sea salt, 1/2 cup gochugaru, 3 tbsp fish sauce, 25 g garlic, a little ginger, 150 g Korean radish (thin matchsticks), 50 g scallions, 1 tbsp sugar (allergen: anchovy in the fish sauce)

  1. Cut the white ribs into short pieces and the leaves a bit longer. Salt and rest 30–60 minutes, turning once, until slightly soft but still crunchy.
  2. Rinse if it’s very salty, drain well, and blot off extra water.
  3. Mix gochugaru, fish sauce, sugar, garlic, and ginger. Let it sit 10 minutes, then fold in radish and scallions.
  4. Coat the cabbage gently. Chill about 15 minutes and serve fresh. Don’t leave it out to ferment.

Best within 2 days. After that it goes soft.
