How can I cut thin sliced meat at home?

Hi! I live in Portugal so I don’t have that much of variety when it comes to Korean food, but I want to try the Mille feuille nabe.

In other note, do you know any substitutions to hondashi? I can’t find it here. And.. if you have any suggestions of good Korean food to start cooking at home I’d love to know☺️
