Backpacking (dehydrated) ideas?

I’ve got a bikepacking trip coming up with my daughter, and I want to give her good memories about eating Korean food with me, just like I got from eating with my appa.

We will not have a cooler, so I am looking for something that is not sujebi to make with dry ingredients that don’t require refrigeration, which may require some rehydration.

I have two Korean grocery chains nearby, so I don’t think sourcing ingredients will be a challenge. I may be interested in dehydrating some food at home…

The first idea that is coming to mind is ddeokguk for breakfast, but maybe I am missing some other
