Hi! I have an abundance of bracken fern on my property and have tried to research extensively how to prepare dried gosari from fresh, but I think I need help. I am 100% sure that I have the correct plant.
I watched/read anything I could find about preparing from fresh (mostly Korean, some Chinese and Belarusian vloggers), and while content on cooking with the prepared gosari is abundant, producing it from fresh seems to be a black hole. I cobbled together any takeaways, picked a small batch of ferns, and this is what I did:
I picked them before the tops started to unfurl. I washed them in several changes of water, then blanched in lightly salted water until tender but still firm (approx 15 minutes), then shocked them in cold water, drained and soaked in another round of fresh cold water for 24 hours. They are now drying on racks in the sun on a breezy day.
Does anyone have experience or knowledge on the subject and could reassure me that I’m on the right track?
