Found a Korean grocery store close to home as I was looking for more authentic ingredients. Picked up a few things… wanted to actually make Tteokbokki, but we had so many leftovers I’ll have to save that for another day. Yes, that’s frozen kimbap. Sorry! 😉 Honestly, I can make it fresh, just wanted to try this to see how it tastes. I know I can make yachaejeon without buying the pancake mix, I’ve tried a few recipes on TT and my favorite is this one by Chef Chris Cho (TT) – https://www.tiktok.com/@chefchrischo/video/7457363066620022062. Mine never turned out crispy, but still I enjoyed it. Oh and bonus, his kids are incredibly cute! What I made today was using the pancake mix that I bought. I added carrots, zucchini, green onions, and daikon radish. Paired with my homemade spicy radish salad. These turned out great, not like a traditional pancake – more spongy, if that’s the right word. But needless to say, it was gone in seconds. My boys loved it.
