Help me guess how this lady seasons her jumeok bap

This lovely lady runs a shop that sells ban chan and kimbap and other prepped korean food, but my favorite is her jumeok bap. She makes it with walnuts, carrots, burdock, seaweed and probably some other stuff I’m missing, and they are very good. I would like to try and replicate it at home, but I haven’t found any recipes with rice seasonings that I think would match how hers tasted, and her rice is definitely seasoned with something. recipes I’ve found online have been pretty simple with seasonings, being just salt or sesame oil or soysauce (or even using a wet filling like kimchi to flavor the rice). Hers look brownish or brownish-reddish, depending on whether you get the spicy or non spicy version. Dominant flavor is mostly sweet with maybe a hint of sourness and a satisfying amount of savouryness (and spice if you go for the red ones). I don’t really taste soy sauce but I assume its in there since they’re pretty brown. I’m also guessing that gochujang is probably how she does the spicy ones. The rice seems oddly rich which makes me suspect she put a bit of mayo in there too (is this a thing outside tuna mayo?), although that may be just the richness from the walnuts. What is she using to get the sweetness and (maybe) sourness? mirin? sugar syrup? Apologies for the rambliness.
