Can gogugang turn black?

Can gogugang turn black?

I use red pepper paste when cooking frequently so my step mom gave me some she had stashed. I just opened it; it expired 2008 but I figured it’s sealed and fermented.

Colour surprised me! Taste was more savory and less sweet and spicy. Not bad. But I am VERY white. Should I be concerned?
