Has anyone ever made kimchi chigae with beef belly?

I have been trying to get beef navel/short plate/beef belly to try making some beef bacon. However, the supplier only has it in a box that’s 57 lbs, so I’m thinking of other things to do with it.

I grew up eating kimchee chigae where my mom used spam as the meat. I late found out that pork belly is more of the “authentic” meat to use. Has anyone tried this with beef belly? Not that anything is going to stop me from setting aside a couple pounds for this and doing it anyway, but I was curious.
