Restaurant Gamjatang Downhill?

Soup season! !! Ordered pork bone soup at 3 different restaurants within the last 2 weeks. The last 2 tasted incredibly off with just bland bones sitting in red salty broth. Realized that the last 2 did not have the ground perilla seed powder topping on top of the soup. How expensive are perilla seeds and perilla leaves?

Why are restaurants skimping on this hey ingredient that makes gamjatang tasty?
