Question about saving kkaennip / perilla via dehydration

Hey folks! This past season I grew kkaennip for the first time because I was tired of not having it when I wanted to. It turned out great but as the season ends I’ve been thinking about dehydrating some and grinding it so that it’s like like a spice (like dried basil/oregano). I was thinking about maybe mixing it into rice sometimes or making a furikake mix or something. I mentioned this to my mom (who also usually grows kkaennip and would be my source for it when I visited home lol) and she said she never heard of anyone doing this. I’m a little surprised at this – perhaps folks usually end up just make side dishes out of it and that’s why it’s not a thing.

Has anyone heard or tried this before?
