Making korean corn dogs with fresh mozzarella?

This is a noob question but i wanna make korean corn dogs and the recipe I’m following says to use mozzarella and this is the only one i could find. I tried researching online and it says that since this mozzarella is fresh it won’t work like it’s supposed to. It’ll just melt too fast and release too much water. Apparently i need one that’s drier. But i don’t know, is this actually true tho? Or can i just try and use it?
