Is there a way to mellow out/cut out the sour punch of kimchi when you eat it?

I’ve been getting into Korean food the past couple of years since they put a Korean bbq restaurant in my town and it is so so good.

However I have a mixed relationship with kimchi. I love the taste of the seasonings and flavor when it first hits my tongue, but then once I bite into it I can’t enjoy those flavors bc my throat gets sucker punched with sourness.

Is there a way to eat or prepare kimchi that cuts a bit of the sourness down?
