I picked up a few bags of myeolchi (dried, salted anchovies) from the store and pretty much them as a low-calorie snack. They are shelf-stable at the store, and come in a re-sealable bag.
About a month ago I opened a bag and would eat about 10 of the dried anchovies whenever I needed a tiny snack. I kept the bag (re-sealed) in a pantry at room temperature.
Today, I went and poured some out from the bag and started snacking on them, but they felt a little bit “dustier” than usual. I noticed then that they tasted very much like blue cheese. Upon visual inspection, the anchovies were very “fuzzy”, with dark green and dark blue fuzzy patches around the crevices. Not extremely obvious at first, but upon closer inspection… yeah.
So, how do I avoid this? Do I have to refrigerate the bag after opening? I’m very worried about outright freezing the bag because I need to be able to open the bag and pour a couple of anchovies out here and there. If the bag is frozen, the anchovies will kind of clump together and it will be impossible to pour out a small quantity every time.
Will refrigeration work? How is mold growing on these things if they’re salted and dried?
