End of summer naengmyeon feels: Hoe-naengmyeon from Namwon

Getting a bit emotional as naengmyeon season winds down! This is hoe-naengmyeon I had in Namwon – the raw fish version that’s less common but absolutely worth trying.

For those unfamiliar: hoe-naengmyeon typically uses fresh pollock or sometimes skate, mixed with the chewy potato starch noodles and that tangy-spicy dadegi sauce. (Korean chili-garlic paste) Namwon’s version was particularly good – the fish was incredibly fresh and the sauce had just the right balance.

What I love about regional naengmyeon variations is how each area puts their own spin on it. Namwon’s hoe-naengmyeon has this distinct preparation style that’s different from what you’d get in Seoul or Busan.

Anyone else have favorite regional naengmyeon spots? Or thoughts on hoe-naengmyeon vs. regular mul-naengmyeon vs. bibim-naengmyeon preferences?
