Day 1 with Costco size cucumber kimchi: still optimistic…🤭

My husband picked up a large tub of cucumber kimchi from Costco since it was on sale. The sell by date is coming up pretty soon, and while I know kimchi doesn’t truly expire per se, I’d love to use it while it’s at peak flavor/texture. We love kimchi of all kinds and I have plenty of ways to use cabbage kimchi, but cucumber kimchi usually feels more limited. Any favorite recipes or creative ideas for using it up (beyond just eating it plain)?

P.S. I always double plastic wrap the openings of my kimchi containers to contain the smell…because….no kimchi fridge. 🤷🏻‍♀️☺️
