I’ve been trying to make Dalgona candy heaps lately since it has gone viral again because of the second season of Squid Game, and I seem to have figured out how to make them properly almost every time. However, every time I make a Dalgona that seems perfect, I will leave it out for probably less than 2 minutes to wash my equipment or make more Dalgona, only to find that the Dalgona is cracked. This is consistently happening to me but I have only found 1 video online of somebody with the same issue, with nobody else mentioning it. I have searched through many recipes and tips for making Dalgona, but none mention this problem.

My Dalgona does not fully explode like in her video, but they still have large cracks that usually break the shape in the center which stops me from being able to play the game.
This is how I make my dalgona in case it has something to do with the cracking:
-heat 1.5 – 2 tablespoons white sugar in a metal ladle over a low flame while stirring with a chopstick
-wait till the sugar has fully melted into a liquid and is a light yellow caramel colour
-add in a pinch (around 1/8 teaspoon) baking soda (aka bicarbonate soda)
-stir quickly away from the flame as the sugar becomes light and frothy from the baking soda
-pour onto a baking mat sprinkled with powdered sugar, wait 10-20 seconds, then press down using any circular metal surface coated in cooking spray and powdered sugar
-press it with a cookie cutter to make the shape then leave it to cool down
