Water Kimchi without alliums?

Looking for advice or recipe for a water kimchi without garlic or onions. I can find temple kimchi recipes pretty easily, but for the thick paste variety. Is there a good substitute for the onions and garlic in water kimchi? What other flavourings can be added instead? How to prevent it from getting too sour? Thanks in advance!
