Is it going to be obvious if dried anchovies are bad? I want to become familiar with the flavors, and understand they can have a pretty fishy taste and smell, but how to tell if it’s gone too far? I’ve read they should be whole and have silver skin, the ones I picked up have some almost whole, but many are in pieces with flakey skin. It isn’t dated out for two more years, and I bought it cold.
