I went to an H-Mart for my birthday,and picked up some of the these noodles. I love noodles, especially sweet potato noodles (japchae is a favorite food). I can’t eat wheat, so I tend to stick with chow fun when opting for rice noodles because they seem so much more substantial to me…which brings me to these! I have never seen sweet potato noodles so large! The package recommends eating them with tteokbokki or steamed chicken or in stew. I am wondering what would be a good vegan option for these? I have a family get-together this weekend and have several folks who don’t eat meat or cannot have dairy, so I thought I would use these for something.
