Jaengban Guksu- Makguksu ?

Maybe it’s a stupid questions but you know how 쟁반국수 or some 막국수 are served and then you have to mix it yourself with a glove right, I was just wondering why doesn’t the waiter does it ? I am wondering if it’s linked to some sort of traditions or is it for aesthetic reasons, to serve the pretty plate of noodles and vegetables and give the customer an experience? Maybe there is no specific reason but I am just curious if there is something behind it , or not ! Thanks !
